GDO&#8217;lu m\u0131s\u0131r daha h\u0131zl\u0131 ve daha fazla b\u00fcy\u00fcr; b\u00f6cek ve otlar, k\u00f6t\u00fc hava ko\u015fullar\u0131na daha dayan\u0131kl\u0131d\u0131r. M\u0131s\u0131r; \u00fczerinde \u00e7e\u015fitli mikroorganizmalar\u0131n, mantar ve k\u00fcflerin kolayl\u0131kla \u00fcremesi i\u00e7in elveri\u015fli bir tah\u0131ld\u0131r ve aflatoksin ad\u0131 verilen, \u00f6zellikle karaci\u011fer kanserine neden oldu\u011fu bilinen bir mantar zehrini bar\u0131nd\u0131rabilir. M\u0131s\u0131r \u015furubunda fruktoz serbest bir halde bulunurken; sofra \u015fekerinde fruktoz glikozla ba\u011fl\u0131 ve bir arada; meyvelerde ise fruktoz, glikoz, sakaroz farkl\u0131 oranlarda bir arada bulunur. Meyvelerdeki fruktoz lif, vitamin, mineral, fitobesin ve antioksidanlarla birliktedir. Meyveler olgunla\u015ft\u0131k\u00e7a i\u00e7lerindeki glikoz, fruktoza d\u00f6n\u00fc\u015f\u00fcr; fruktoz oran\u0131 y\u00fckselir ve glisemik indeksi azal\u0131r. M\u0131s\u0131r \u015furubundaki fruktoz ile meyvelerdeki fruktozun ba\u011f\u0131rsaklardan emilimi olduk\u00e7a farkl\u0131d\u0131r. M\u0131s\u0131r \u015furubunda yer alan, ba\u011fl\u0131 olmayan ve fazla oranda bulunan fruktoz h\u0131zla kana kar\u0131\u015f\u0131rken; meyvelerdeki do\u011fal fruktoz, birlikte oldu\u011fu \u00e7\u00f6z\u00fcn\u00fcr ve \u00e7\u00f6z\u00fcnmez lifler nedeniyle yava\u015f\u00e7a emilir ve ba\u011f\u0131rsak h\u00fccrelerine zarar vermez. Fruktozun karaci\u011ferdeki metabolizmas\u0131 da farkl\u0131d\u0131r. Fruktoz metabolize olmak i\u00e7in glikozdan 3 kat daha fazla enerji kullan\u0131r ve sonu\u00e7ta 3 kat daha fazla \u00fcrik asit sentez edilmi\u015f olur. Ba\u015fta alkols\u00fcz i\u00e7ecekler (meyve sular\u0131, asitli i\u00e7ecekler, sodalar vb.) olmak \u00fczere b\u00fct\u00fcn haz\u0131r g\u0131dalarda (kek, bisk\u00fcvi, \u00e7ikolata, \u015fekerleme, t\u00fcm j\u00f6le ve benzeri \u00fcr\u00fcnler, haz\u0131r ekmekler vb.) yayg\u0131n olarak kullan\u0131l\u0131r.\u00a0\u00d6zellikle \u00e7ocuklarda kronik hastal\u0131klar\u0131n en \u00f6nemli nedenlerinden biridir. Meyve ve sebzelerde fruktoz oran\u0131 azd\u0131r ve posa ile birlikte oldu\u011fu i\u00e7in zarars\u0131zd\u0131r, v\u00fccuda yararl\u0131d\u0131r.
